This is a truly special coffee in a very limited quantity, so we are only offering 12oz bags. This comes from Juan Dario Gomez’s small farm is in the Isnos area of Huila. Juan inherited the farm from his father and has since dedicated himself to innovation and quality. This lot is a special natural process of Caturra and Colombia varieties which have undergone a 96 hour sealed tank anaerobic fermentation and are then dried slowly for 20-30 days on shaded beds. The coffee is grown using regenerative agricultural practices, under a canopy of native shade trees. The resulting cup is incredibly fruity and sweet! We taste notes of blackberry, apricot, passionfruit, mango, and milk chocolate. If you’re really into those experimental processes or the co-ferments, give this one a try.
